Mosquito Restaurant
Drawn from the abundance of Dominican land and sea. Heirloom cacao, wild-caught chillo, and produce from nearby fincas. And shaped by the fresh perspective of a rising chef redefining island cuisine, our menu is a thoughtful balance of flavor, contrast, and technique. From delicate vegetable preparations to pristine local seafood and expertly prepared prime cuts, every dish is composed with intention.
Mosquito Restaurant is our in-house dining experience, overlooking our main pool. Our cuisine is guided by local, quality produce, with much of what's on the plate sourced from nearby farms, fishermen, and markets. The kitchen is led by an exciting young chef who brings a fresh perspective to traditional Dominican ingredients, creating dishes that feel familiar yet new.
The menu changes with the seasons and with whatever the local fishermen and farmers bring in that week, so no two visits are quite the same.
